Thai styled Hot smoked salmon fish cakes
Ingredients
- 500g Mashing potatoes, peeled & mashed
- 500g Hot Smoked Salmon
- Spring Onion, chopped
- Parsley, chopped
- Coriander, chopped
- 1 Chilli, de-seeded & chopped
- Red onion, small dice
- Lime zest
- 1/2cup Bread crumbs
- 1 egg
- Flour
Method
These are very easy to do. You can add what you want to them and they're just as good reheated.
Combine potato, salmon, spring onion, parsley, chilli, red onion, lime zest, bread crumb & egg 'til roughly mixed.Form cakes slightly smaller than palm sized and about as thick as 1 finger. Lightly coat with flour & fry in shallow pan of oil 'til darker golden.Place in oven at 100c 'til all are done.Serve by them selves or with your favourite saladFinish them with a squeeze of lemon juice &/or sweet chilli sauce or garlic & lime mayonnaise.
