Smoked Salmonman Warehou in a Porto Rican styled Tomato Sauce on Mashed Potato

- 350g Salmonman Smoked Warehou
- 150ml Olive oil
- 3 large onions, sliced
- 150ml White vinegar
- 4 garlic cloves, crushed
- 4 Anchovy fillets, chopped
- 2 tspn Capers
- 3 400g tins chopped Tomato
- Salt & Pepper to season
Mash
- 4 large Potatoes, unpeeled & chopped in thumb sized pieces
- 100ml pouring cream
- 40g butter

Method
- In a large pan fry onions in oil on Med-High heat ‘til just starting to brown. Deglaze with white vinegar and simmer for 3 mins.
- In a pot of Boiling water, carefully add potatoes.
- Add garlic, anchovy, capers and tomato to onions. Simmer for 5 mins then season. Add Salmonman Smoked Warehou, place lid on pan and turn down low
- Strain potatoes and add butter, cream and seasoning, and mash. Serve.
