Simon's Simple Scallops
Ingredients
- 2doz Fresh Scallops
- 1Tbsp Seasoned flour
- 1Tbsp Butter
- 1/2 cup Chardonnay
- 2tsp med Curry powder
- Lemon pepper, pinch
- 1cup Creme fraiche or sour cream
- Enough cooked pasta for 2-3 people
Method
Dust scallops in seasoned flour. Heat butter on med-high in pan til hot & add scallops. Cook til done approx 1 1/2- 2 mins. Put aside.
Deglaze pan with Chardonnay on med heat & reduce by half. Stir in Curry powder & lemon pepper. Add creme fraiche & reduce a further 5-10%.
Add scallops for 1min and serve with pasta.
