Simon's Simple Scallops


Ingredients


  • 2doz Fresh Scallops
  • 1Tbsp Seasoned flour
  • 1Tbsp Butter
  • 1/2 cup Chardonnay
  • 2tsp med Curry powder
  • Lemon pepper, pinch
  • 1cup Creme fraiche or sour cream
  • Enough cooked pasta for 2-3 people

Method


Dust scallops in seasoned flour. Heat butter on med-high in pan til hot & add scallops. Cook til done approx 1 1/2- 2 mins. Put aside.

Deglaze pan with Chardonnay on med heat & reduce by half.  Stir in Curry powder & lemon pepper. Add creme fraiche & reduce a further 5-10%.

Add scallops for 1min and serve with pasta.
