Seared Fresh Salmon with Salsa Verde
Ingredients
- 1 thick slice of white bread, crust removed
- 2 cups flat leaf parsley
- 4 Anchovies
- 1tsp capers
- 10 mint leaves
- 1/4 preserved lemon skin
- 1/3 cup olive oil
- 800 gram Salmon fillet, bones removed & cut in four
- 2Tbsp oil
- Boiled Potatoes
Method
Salsa Verde: Soak bread in water & strain. Should be moist but wet. Blend in food processor with all ingredients bar Salmon, Potatoes & 2Tbsp Oil til thick sauce
Salmon: Rinse & pat Salmon dry in paper towels. Heat remaining oil in a fry pan over high heat and add Salmon skin side down. Press them in to the pan ensuring the heat hits the entire fillet. Cook til crispy then turn over. Reduce heat to medium & cook for further 3 minutes.
Serve the Salmon with salsa verde, boiled Potatoes & a sprinkle of salt.
