Scallops with carrot fritters & yoghurt dressing.


Ingredients


  • 12 Fresh scallops
  • Yoghurt dressing (Combine)
    • 1/2 cup plain yoghurt
    • 1 tbsp lime juice
    • 1 tbsp olive oil

  • Carrot fritters
    • 1/2 cup flour
    • 1/2 cup soda water
    • 1 egg, lightly beaten
    • 1/4 tsp each of cumin, coriander & tumeric
    • Sml red chilli, seeded &finely chopped
    • 1 1/2 cups grated carrot
    • 8 spring onions, finely sliced
    • 1/2 cup chopped coriander
    • 1/4cup veg oil

Method


Preheat oven to 160˚. Mix well flour, soda water, cumin, tumeric & tsp salt. Then combine with chilli, Carrot, coriander & spring onion. In frying pan heat oil til hot then add mix, 2 tbsp per fritter & cook til golden brown each side. Add extra oil as needed. Drain on paper towel & place in dish in oven whilst cooking scallops to cook further.

Toss scallops in a bowl with seasoning & oil til coated. Heat non-stick fry pan over medium high & cook scallops for 1 min each side.

Place 3 fritters per plate. Add scallops and watercress or rocket & drizzle with yoghurt dressing.

You may want to try a little parsnip in the fritter mix to give a softer flavour.

Try adding mussels and prawns.
