Heat pan with oil on med/high. In 2 batches add scallops seasoned with pepper & fry ‘til golden brown then turn & fry ‘til done.
Remove scallops & reduce heat to med/low. Sauté garlic for approx 30 sec’s & add orange juice, butter, Grand Marnier & parsley. Simmer gently ‘til slightly thickened.
Very delicious accompanied with thick sticks of carrot steamed then tossed in a lightly reduced sauce of butter, honey, orange juice, parsley & pepper, and mashed potatoes.
Also nice with rice and steamed vege’s. You may want to add a little more juice the sauce for the rice to soak up or perhaps Grand Marnier instead of juice if you feel so inclined.
