Salmon Pizzaiola
Ingredients
- 2 Tbspns Olive Oil
- 500g Fresh Salmon Fillet
- 1 Medium Green Capsicum, sliced
- 1 medium Red Onion, sliced
- 4 field Mushrooms, sliced
- 1 can chopped Tomatoes
- 125g grated Mozzarella cheese
- Salt & Pepper to taste
Method
Heat oil in large frying pan over Medium-High heat. Salt & Pepper Salmon and place flesh side down in panAdd vegetables and saute 3-5 minutes, turning frequentlyTurn Salmon and add Tomatoes. Simmer further 3-5 minutes until Salmon is just opaque.Remove from heat and sprinkle over Mozzarella cheese. Cover for further minute 'til cheese has melted slightly. Do not overcook.
