Salmon Pizzaiola


Ingredients


  • 2 Tbspns Olive Oil
  • 500g Fresh Salmon Fillet
  • 1 Medium Green Capsicum, sliced
  • 1 medium Red Onion, sliced
  • 4 field Mushrooms, sliced
  • 1 can chopped Tomatoes
  • 125g grated Mozzarella cheese
  • Salt & Pepper to taste

Method


Heat oil in large frying pan over Medium-High heat. Salt & Pepper Salmon and place flesh side down in pan

Add vegetables and saute 3-5 minutes, turning frequently

Turn Salmon and add Tomatoes. Simmer further 3-5 minutes until Salmon is just opaque.

Remove from heat and sprinkle over Mozzarella cheese. Cover for further minute 'til cheese has melted slightly. Do not overcook.
