Pan fried scallops with sage


Ingredients


  • 1 1/2doz Fresh Scallops
  • Olive oil
  • Salt & Pepper
  • 3 Tbsp capers
  • Small bunch Sage leaves
  • Lemon

Method


Brush pan with a little oil and place on a high heat.

When smoking add scallops, season with salt & pepper and cook for 2 mins on one side.

Turn scallops and add capers & sage with a little extra oil to fry the sage leaves.

Cook for a further 2mins, shaking the pan constantly to avoid sticking.

Squeeze in lemon juice and serve.
