Pan fried scallops with sage
Ingredients
- 1 1/2doz Fresh Scallops
- Olive oil
- Salt & Pepper
- 3 Tbsp capers
- Small bunch Sage leaves
- Lemon
Method
Brush pan with a little oil and place on a high heat.
When smoking add scallops, season with salt & pepper and cook for 2 mins on one side.Turn scallops and add capers & sage with a little extra oil to fry the sage leaves.Cook for a further 2mins, shaking the pan constantly to avoid sticking.Squeeze in lemon juice and serve.
