Little scallop parcels
Ingredients
- 200x200mm square of tin foil
- 4 fresh scallops
- 1/4 each red & green capsicum finely sliced
- 1/2 knuckle ginger julienned
- Fresh coriander, chopped
- Fresh parsley, chopped
- 1 stick lemon grass finely chopped
- Salt & pepper
- Juice of 1/2 a lemon
Method
These are very simple & easy to do. You can try this method with virtually any fish & in any variation.
Pre-heat oven 195°CSpread capsicum and ginger over centre of tin foil.
Place on scallop and squeeze on lemon juice.Season and sprinkle over coriander, parsley and lemon grass. Take in ends of foil and bring together edges. Ensuring foil does not touch scallops, close foil in tight folds.
Repeat til you have desired number & place in baking dish in oven til done, approx 12 mins.Quite delicious with capsicum, basil, dried garlic, tomato & a little white wine.
