This is a very easy meal to do. You can add what you want and its just as good reheated.
Base
I usually do mine in the bread maker & set it in the morning. However, not everyone has one of these.
Dissolve yeast in water for 5-10 mins. Sift dry ingredients in large bowl. Make well & pour in yeast & oil. Combine using wooden spoon. Oil hands and knead for 5 mins, 'til tacky. Place in bowl & cover with film wrap. Leave at room temperature for 1 1/2- 2 hours. Punch down & reform. Replace in bowl & cover. You can place in refrigerator in airtight container at this point. Will keep overnight.
Approx 2 hours before assembling pizza, remove dough from fridge & cut in 2 equal portions. Roll in to balls, place in glass casserole dish & set aside at room temperature until twice size.
Pizza
Combine jam ingredients & reduce on med-low heat 'til thickened, stir occasionally
Stretch base on pizza stone to approx. 9 inches.
Spread tomato base, then onion jam. Place on Hot Smoked Salmon, Capers, Feta, Capsicums, Olives, Onion, sprinkle on herbs and cover with grated cheese. Preheat oven at 260c for 1 hour. Bake 'til crust is golden, 8-10 mins.
If you don't want to bugger around with making the base, Naan Bread makes a very handy substitute.
