Hot Smoked Salmon & Kumara Quiche


Ingredients


  • 200grams Hot Smoked Salmon chunks
  • 2 medium cooked Kumara sliced in chunks
  • 6-8 large eggs
  • 1/4 cup of cream
  • 1 red onion, chopped
  • 1/2 red capsicum, chopped
  • 1/2 cup feta, chopped
  • 1 cup grated cheese
  • Chive & parsley, chopped
  • 2 Tblspn Paprika
  • 2 sheets frozen puff pastry

Method


Cut 1 sheet of pastry in half to line tin walls. Place base of tin on remaining sheet and cut around. Place this in the base of the tin and press into corners.

Evenly place Kumara, feta, onion, capsicum, salmon, herbs & paprika in tin.

Mix together egg & cream with salt & pepper and pour in tin. Sprinkle cheese over.

Bake at 200C for approx 35 mins or 'til cooked.
Top with sour cream. Serve hot or cold. Great to keep in the fridge (if it lasts that long!). Very nice with fresh salad.
