Hot Smoked Salmon & Feta Frittata


Ingredients


  • 200grams Hot Smoked Salmon
  • 5 medium potatoes or Kumara cold, cooked & cut in 8
  • 8 large eggs
  • 1 red onion, sliced
  • 2 cloves of garlic, chopped
  • 1/2 red capsicum, chopped
  • 1 cup feta, chopped
  • 1/4 cup cream
  • 1 cup grated cheese
  • Chive & parsley, chopped
  • 3 Tbs cooking oil
  • 2 Tbs Paprika

Method


Place potatoes in a plastic bag, add paprika & shakes til covered.

Heat oil & butter in non-stick fry pan & add onion & garlic & cook til soft.

Add potato and capsicum & cook for approx 5 mins. Add chives & parsley. Add Salmon & feta. Season to taste.

Mix eggs & cream together & add to pan. Shake to make sure mix settles evenly. Use gentle heat to cook bottom & sides evenly.

Sprinkle with cheese & brown under griller.

Top with sour cream.

Serve hot or cold. Great to keep in the fridge (if it lasts that long!)
