Grilled Salmon w/ Mango Salsa


Ingredients


  • 200ml Orange juice
  • Pinch of salt
  • 3 tbspn sugar
  • 1 1/2 cup mango (1/4"diced)
  • 3 tspn jalapeno sliced
  • handful coriander chopped
  • 1/2 tspn pepper
  • 6 Salmon Steaks, seasoned with salt & pepper

Method


Reduce O.J., salt & sugar until 6 tbsp remain, cool. Then add mango, coriander, jalapeno & pepper, Mix well & chill

Grill Salmon until done (approx. 7-10 mins per inch). Place on top of salsa on plate

Serve with rice and salad.

Try cooking the salmon on the Barbecue. As with grilling, you will need a medium to medium-high heat.
