Salmonman Gravlax is cured for 48 hours and then seasoned with pepper, lime zest, dill and juniper berries. A refreshing and delicate flavoured salmon. Slice thinly and serve with gherkins, sour cream lime or lemon juice, lovely fresh bread and salad 

Literally meaning "Buried Salmon", in Norway and indeed throughout Scandanavia, the salmon catch would be brought to shore and buried on the beach. The mix of salt wash from the ocean and permafrost would ensure the salmon was preserved allowing it to be consumed long after it was brought in.
