Garlic & Lime Mayonnaise


Ingredients


  • Mayonnaise
    • Yolks of 4 large eggs that have been stood at room temperature for 12 hours or more
    • 2 lemons, juiced
    • Salt & pepper
    • 500ml clear nut or vegetable oil
    • Wholegrain mustard

  • Garlic & Lime
    • 3 garlic cloves, crushed
    • 2 limes, juiced

Method


Thought I'd include this, as there are some people that are concerned about or have not tried making their own mayonnaise before. This recipe is fail safe BUT you must follow it.

Mayonnaise

Place egg yolks, lemon juice,mustard and salt & pepper in a food processor and set going, leave for 1min.

While food processor is still going, from a jug, begin to pour in oil at a steady rate just passed dripping.

As the mixture begins to turn white you can speed up the pouring, but not too much. Continue pouring 'til oil is finished.

This should give you a consistency that is quite thick. This is your base. Test & adjust to taste. If after adding further ingredients it is too thick, add a little
luke warm water 'til consistency achieved.

Garlic & Lime

Mix garlic and lime in mayonnaise.
