Baked scallops with orange sections
Ingredients
- 700g scallops
- 2 tsp. olive oil, approximately
- 2 navel oranges, carefully peeled
- 1 tsp. fresh dill, chopped
Method
Preheat oven to 450 degrees. Put the 3/4 pound large scallops in a 9 inch baking dish, drizzle with olive oil. Using a small sharp knife carefully cut the orange sections from the white membrane, working over the baking dish to catch the juice. Using your hands, squeeze out all remaining juice from the membranes over the dish. Arrange orange sections among scallops. Bake for 8 minutes. Remove baking dish from oven and turn heat to grill. Sprinkle scallops with dill. Grill just until all scallops are cooked, 3 to 4 minutes.
