Bacon wrapped scallops with lemon chive butter


Ingredients


  • 3doz scallops
  • 450g sliced bacon
  • Lemon-Chive Sauce
    • 2 tbsp. chopped fresh chives
    • 2 tbsp. fresh lemon juice
    • 1 tbsp. olive oil
    • 1 clove garlic, minced
    • 1/4 tsp. salt
    • 1/8 tsp. freshly ground pepper

Method


Cut bacon in half crosswise. Wrap each scallop in a piece of bacon, and secure with a wooden pick. Place scallops on a rack in a griller pan; brush with lemon-chive sauce. Grill 6 inches from heat 10 to 15 minutes or until scallops are opaque and bacon is done, turning occasionally. Serve immediately.

LEMON-CHIVE SAUCE:
Combine all ingredients in a small bowl; stir well with a wire whisk until blended. Yield: 1/4 cup.
